So the latest process of finding a diabetic recipe that isn’t high calorie AND is kid approved I thought would be so easy. I think I know! Eggplant Parmigiana! Yeah……no. That was a BIG no thank you! Vegetable lasagna with zucchini noodles? They didn’t even want it made let alone sampled….So I found a recipe and then modified it for my family and we found a winner! I mean you obviously you can’t go wrong with bacon and kids LOVE drumsticks!
You only need as much bacon as you have chicken or vise versa, so you may already have all the ingredients on hand!
Preheat your oven to 350
Remove the skin from the chicken, dust with garlic powder. Then wrap the drumsticks in bacon. Finally coat the leggies in the brown sugar.
Literally, that is all there is to the prep…
Cook for 45 minutes.
Let me just say I never had such a juicy price of chicken! I had a piece, my husband had three and my eight year old cleaned up the rest!!
The original recipe called for chili powder and chicken breast, so there is definitely some wiggle room to spice up for parent dinner and down for the kiddos!
