Crescent Heaven

Sorry it has taken me SO very long to post, but I was diagnosed with diabetes and as a baker it really threw me for a loop! All my yummy treats are now poison to me?! Noooooooo!!

So now while I still bake for others I must now learn to bake for me and others like me.

So are you ready to adapt? Adjust? And over come! Hoo rah!!

So this is the yummy smell coming from my kitchen right now.. Crescent heaven aka crescent crack!

What you’ll need:
2 rolls of crescent rolls.
I used walmart brand as it has the least sugar carb and fat. I know right? Total shocker!
8 oz philly cream cheese LIGHT (softened)
1/2 cup + 1/4 cup Splenda
1/2 tsp vanilla
1/4 cup I can’t believe it not butter spread -LIGHT! (Melted)
1 tbsp cinnamon

Unroll and spread 1can of the crescent rolls out on the bottom of un-greased pan.

Combine softened cream cheese, 1/2 cup of Splenda, and vanilla.

Spread mixture evenly over crescent roll. Unroll and spread remaining crescent roll over the cream cheese mixture.

Spread melted “I Can’t Believe It’s Not Butter” spread over the top. Mix the 1/4 cup Splenda with the tbsp cinnamon and sprinkle over the “butter”.

Yeah it’s a lot to put on, but worth it! Bake 350 for 20-30 minutes. Serves 16!

Ok can I just say YUM!! I would even say add some no sugar added apple sauce with cinnamon, cherry pie filling, peaches with cinnamon, or anything else like that to the top of the cream cheese before adding the top crescent roll sheet! Maybe a dolup of low fat whipped topping!!

Ok so sometimes people will rush you in life. Your kids, teachers, parents even the dog! Here is a quick decoration that anyone can do AND it will make you look like an award winner.

I get home from my day job around 4:15-4:30 to hear a voicemail asking for a cake to be donated….That night….Seriously people…I’m good, but not that good..or so I thought…

What did I have on hand…two left over colored sugar sheets and a couple of bags of Sixlets candy I bought for halloween. Ok so not what people usually have on hand, but who said I’m usual?

I continue to look around and my quilting is on the table. GREAT!

I bake up a standard cake and get the buttercream into the mixture.. Everyone loves chocolate so I (secret ingredient spoiler follows) put in some packets of hot chocolate mix and run that baby until smooth. Seriously amazing flavor!!

Meanwhile, I use my quilting cutter to cut squares out of the sugar sheets and pray they work. Cake out of the oven, turn off the mixer and run to collect my kid from his afternoon sports and rush back to the house. I cut the cake and fill with some of the icing. Dirty ice or “crumb coat” the cake and get my then six year old to wash and dry his hands. I emptied the Sixlets into a bowl and ask him to do like mommy is doing placing the candies into the side if the cake in neat rows.

I return to cutting the squares and them place them on the cake. Looking at the cake it needs….something….got it. Grab some gel icing, the tube kind from the store and draw lines and dits to gave it a sharper look and done. Fill a piping bag with a tip…ANY tip, and the remaining buttercream. I would had been happy with a sandwich bag with a whole cut in it at that point!

Somewhere in there I am sure I lost years off my life, but I am proud of the finished product. We load it up and deliver by 7:30.

Rave reviews. My lucky husband was not home for the mad rush and he’s lucky cause God knows I’d have snapped at him at least once. However he did get to enjoy the relaxed calm that settles over me when it’s done, and it came out better than I expected!

Why bake?

Why bake? Well go back with me to a house with 5 kids two bedrooms and only one bathroom! (Mom and Dad had their own bed and bath, how fair is that?) what does that equal?

Chaos.

There never was a time when things weren’t hectic, scrambled and a little overwhelming. I watched one sister mix up the salt and sugar in chocolate chip cookies. I tasted another’s brownies with a CUP of vinegar to change milk into buttermilk. Yech! Someone even set the kitchen on fire while making the elusive homemade donut. I myself cooked butter too long and made a non-stick pan…well… sticky! It seemed like it was the hardest thing on the planet.

Cooking, baking…too hard… I mean if God wanted us to use the stove, why did he invent the microwave?

It didn’t seem any easier as I grew older. Then one day after a horrible break up where my future seemed sealed off, I was sitting on the kitchen floor trying to figure it out. I started organizing my mothers pantry ( ok so I stayed home longer than most and I’m a little OCD) I saw a box of cake mix. Eggs, butter, water…..that’s it??? What was I so scared of?

I got off the floor and pulled out some pans. Followed the directions and BAM … Cake.

Something in my life came out exactly like it was supposed to. I followed the direction and got a yummy treat in return. Who Knew?! I haven’t looked back. I graduated from that boxed cake and learned to follow more intricate instruction and still get the desired result.

To this day, much to family, friend, and co-workers delight, when I get stressed I BAKE!!!

Ok don’t return my kid on time from visitation, they’ll just return home to brownies, cookies and cheesecake….tell me I have to wait for test results…..my kids teachers and class just got cupcakes…

I started changing up recipes as I figured out how to make it more to my taste. I discovered that more and more people shared my taste and wanted my recipe. I even had someone tell me they had a taste for a brownie and bought one, but it wasn’t the same… His taste was for my brownies..Wowzers!!

Then the final piece to the puzzle… My husband signed me up for a cake decorating class. It opened a whole new world of creation for me.

So why bake? For sanity, for stress release, for a creative outlet, or just for a yummy treat.
